Safe to consume?
I just pulled out my second large mason jar from the cabinet, it’s from my first harvest this year. The lid was under pressure and made a little psst sound when I opened it. On top of the honey was a thin layer of a brown frothy looking substance. And there was a little alcohol smell of fermentation.
My impression is, there was a little contamination in the honey and some of it fermented.
Is the honey safe? Do I need to pasteurize it?
I spooned off the layer of brown stuff from the top and wiped the top edges of the jar with a paper towel. The vast majority of the jar looks looks normal thick honey.
