Canning honey that has too high a moisture content?

I don’t have a refractometer (just ordered one), but I harvested 3 gal of honey into mason jars for personal use and it appears a bit more fluid than one might expect.

I’ve got a refractometer on the way, but im tempted to water bath or pressure can the jars so they don’t ferment.

Is this a viable solution?
